Our beans move from a 100 pound burlap sack to a finished product on our shelves through a simple process. We do offere beans at various stages of edibility and we are happy to share with you our processes here. We will divulge our "Behind the Scenes Preparation" methods as well as list ideas for your "On the Scenes Preparation". This is when you get to have fun with your lovely Cacao Beans. Please remember that these are simply recommendations and we encourage you to experiment with what may work for you in your kitchen.
Raw Beans
Behind the Scenes Preparation~
We do offer raw beans which are simply hand-scooped from this rustic sack directly into a bag that we custom make for your order. We literally trim the plastic and seal it into a bag for your order.
On the Scene Preparation~
When you are ready to utilize your beans, they should be rinsed several times and left to dry on a drying rack or towel until use. It never hurts to aggitate the water in which you are washing them to ensure that the beans are thoroughly cleaned. Peel the soft shell (which is similar to that of a peanut skin) from the bean by rolling it between your fingers. You will find that is simply slips away.
Roasted Beans
Behind the Scenes Preparation~
To prepare the beans for roasting, we first fill up a bin with cacao beans and water and swirl them about. We really like to get our (clean) hands right into our product. We then hand scoop them onto a custom-built drying rack and leave them overnight to dry. The beans are then placed on baking sheets and placed into our nice new ovens and are roasted at 375 degrees for a few hours.
We allow the beans to cool and then cut and assemble bags for the product. Our lovely label is affixed and it is on its way to your home in a swift manner.
