Welcome to Stone & Giacomotto Cacao

Over the past few years, we have spent much time cooking and enjoying rich, full-flavored foods from scratch.   For the home chef, however, these efforts become difficult when it comes to dessert or any food where the subtle flavor and texture of cocoa beans is desired such as in mole poblano (a mexican dish with a chocolate-based sauce).

For example, have you ever seen a cacao (cocoa) bean in real life? Cocoa beans are seemingly lost to the arsenal of the chef since the major chocolate companies and food distributors make much more money separating the cocoa solids and the cocoa butter to sell as separate ingredients.

we spent a tremendous amount of time searching for raw cacao beans (cocoa beans) and could not find them anywhere.   so, we founded Stone and Giacomotto Cacao to bring the world's finest cacao beans to your kitchen pantry.

Our cacao beans bring the rich, complex flavor of chocolate to your cooking with out the added milkfat and sugar that the major manufacturers add to their chocolate.   The cocoa flavor that is so divine is concentrated in our different beans giving each kind a unique flavorthat can accent many dishes or desserts.   Using cacao beans in your cooking will bring you closer to the source and place foods on your table that are more intriguing, full-flavored and that use ingredients you understand you can get the chocolate flavor without lechitin, polysorbate or other ridiculous, processed ingredients that manufacturers use to strengthen their bottom line at the expense of the flavorof your chocolate.

Currently, we have two varieties available: sur del lago and carereno from venezuela.   both are highly fermented cacao beans with exquisite flavor.   the sur del lago beans have a smooth, luxurious flavor while the carenero give a stronger chocolate flavorgreat for making elegant, dark chocolate.
